175gm (6oz) butter, melted
1/2 cup caster sugar (baker’s sugar)
1 3/4 cups self-raising flour
1 level tsp bicarbonate of soda (baking powder)
Pinch of salt
3 extra-large eggs (60gm each)
3 ripe bananas, peeled and mashed
2 tbsps milk
A few drops vanilla essence
Pre-heat oven to 180C (350F).
Line a 22cm (9in) round cake tin or 30cm (12in) loaf tin with baking paper.
Sift together s.r. flour, bicarbonate of soda and pinch of salt into a
medium-sized mixing bowl.
Break eggs and add to flour & sugar mixture.
Add vanilla essence, milk and mashed bananas, mix well with wooden spoon.
Pour melted butter into mixture and mix thoroughly.
Pour mixture into cake (or loaf) tin and bake for 40 – 50 minutes.
Gently insert a skewer in centre of cake to check if cooked through (skewer
should come out clean, otherwise cook for further 5 – 10 minutes).
Remove cake and allow to cool on a wire cake rack.
